The Secret of Our Dough
Dough is the soul of Pizzeria Marghe 1889. Its lightness and flavor are due to a rigorous artisanal process:

Crafted with selected wheat flours from an artisanal Italian mill.
Minimal Yeast & Maximum Hydration
We work with low yeast content and a high hydration level (70%).
Long Fermentation
We let the dough rest for over 72 hours, resulting in a pizza that is noticeably tastier, softer, and easy to digest.
